U mnie jest dziś deszczowo i ponuro, najchętniej zostałabym w łóżku, ale zamiast tego siedzę w kuchni… i piekę (zaskoczeni?) Ten post piszę kiedy crumble z pigwą jest już wspomnieniem, ale tak sobie myślę, że to idealny deser na zimne jesienne popołudnia i chciałabym mieć choć jeden kubeczek pod ręką…
Pigwę dostaję co roku od taty, taką prawdziwie ekologiczną z naszego sadu. Znam ją od dzieciństwa (głównie w postaci konfitur lub dodatku do dżemów), ale dopiero teraz odkrywam ją na nowo. Okazuje się, że z pigwy można wyczarować o wiele więcej niż przetwory… O wiele więcej!
Dlatego na początek wypróbujcie pigwę pod orzechową kruszonką, korzenną i aromatyczną. Jest wspaniała na ciepło (to zdecydowanie propozycja na dziś) lub na zimno. Z gałką lodów, sosem waniliowym, albo po prostu posypaną cukrem pudrem z kubkiem gorącej herbaty.
Zmodyfikowany przepis pochodzi z tej strony.
Składniki na 4 porcje.
Pigwa w ponczu:
2 duże pigwy (ok. 400 g),
2 szkl. wody,
250 g cukru,
2 całe ziarenka kardamonu (lub 1/4 łyżeczki mielonego),
2 cm kawałek kory cynamonu (lub 1/2 łyżeczki mielonego),
2 łyżki soku z czarnego bzu (lub malinowego),
sok z 1 cytryny.
Wszystkie składniki oprócz pigwy podgrzewamy w rondlu, aż cukier się całkowicie rozpuści i poncz zacznie wrzeć. W między czasie obieramy pigwę i kroimy na ćwiartki lub większą kostkę. Owoce wrzucamy do wrzącego ponczu i gotujemy na niewielkim ogniu, aż pigwa zmięknie czyli 30 min. do 1 h. Zdejmujemy garnek z kuchenki i zostawiamy do ostygnięcia. Przechowujemy w lodówce.
Kruszonka:
30 g płatków migdałowych,
20 g pistacji,
40 g mąki gryczanej,
75 g mąski pszennej,
50 g brązowego cukru,
60 g masła,
20 g płatków owsianych.
W malakserze rozdrabniamy migdały, pistacje i miksujemy je z mąkami. Dodajemy masło i cukier i miksujemy, aż kruszonka będzie miała konsystencję mokrego piasku.Na końcu wsypujemy płatki owsiane i mieszamy łyżką.
Pigwę odsączamy, zostawiając kilka łyżek ponczu i kroimy na mniejsze kawałki. Rozdzielamy pomiędzy ramekiny (podlewając 2-3 łyzkami płynu) i posypujemy kruszonką. Zapiekamy przez. ok. 30 minut w 180 C, aż kruszonka lekko zbrązowieje.
Crumble z pigwy podajemy posypane cukrem pudrem, z lodami, sosem waniliowym lub bitą śmietaną. Równie pyszne na ciepło i na zimno!
Today it’s one of those rainy and gloomy days when you could just stay in bed for the rest of the day. Instead I’m in my kitchen, baking – surprised? 🙂 Quince crumble is looong gone when I’m writing this post but I wish I had one hot pot of spiced deliciousness… It’s perfect dessert to warm you up on a day like this, easy and quick to make too.
Every year my dad provides me with some truly eco quince from our orchard, When I was little I knew it from jams or marmelardes but quince is so much more! I discover it all over again!
So if you’re new to it try quince crumble and then we’ll move to more sofisticated recipes 🙂 Quince crumble is full of spices, nuts, oats. Try it hot or cold, with ice cream, vanilla custard or just sprinkle with sugar and enjoy it with a cup of hot tea. Either way it’s just a little perfection.

Makes 4 servings.
Ingredients
2 large quinces (about 400 g to 1 lbs),
2 cups water,
1 1/4 cup sugar,
2 cardamon seeds, crushed (or 1/4 tsp),
1 inch cinnamon stick (or 1/2 tsp),
2 tbsp elder berry syrup (or raspberry syrup),
juice from 1 lemon.
In a large pot mix all of the ingredients except quince and bring them to boil. Pell quince, cut into large cubes and place straight into boiling liquid (sugar should be dissolved by now), bring to boil and reduce to stimmer. Let cook for 1 hour until quince is soft and deep orange/peach color.
Remove from heat and allow to cool. Store in the fridge until ready to use – it’s best to prepare quince few days earlier, the longer it sits in the syrup the better it tastes.
Crumble:
30 g sliced almonds,
20 pistachios,
40 buckwheat flour,
75 plain flour,
1/4 cup brown sugar,
60 g butter,
20 g oats.
Ina bowl of you food processor combine amonds and pistachios, process until combined. Add flours and mix for a few seconds.
Add sugar and butter and mix until it forms crumbles. Add oats and mix with a spoon.
Drain quince leaving few tablespoons and cut into smaller pieces, divie among the ramekins adding 2-3 tbsp of liquid. Top with crumble mix.
Bake for 30 minutes at 350 F, until the crumble turns golden color.
Quince crubmle can be eaten cold or when it’s still hot. Try it with vanilla ice cream, custard or whipped cream!

This is definitely a stay-at-home comfort food. I like that it has cardamom. I’m a big fan of that spice.

I think your recipe is suitable for the microwave oven too! We just moved and looking for easy recipes to make 😀 Plus I really love quinces, it’s my favorite fruit of the season
I’ve never tried baking in a microwave but I suppose it would work too. I love them too! They smell amazing.

It’s really worth trying, I think quinces are perfect for anything – I just made a quince curd and it’s good too.
